Noms on a Friday {The best EVER Passionfruit Slice}

Baby it’s cold outside. And I love it! But if you’re one of those strange er I mean, delightful people who are pining away for Summer, I have a deliciously fresh and fruity, summery type slice for you. This is my go to baking item. It’s the work morning tea, Mother’s Group, cake stall, shit! Someone is coming over slice. It’s easy, quick and requires a minimum of ingredients; most of which you probably already have. 
I don’t know about you, but I am obsessed with passionfruit. During pregnancy it was all I wanted and I’ve never gone off it. When we lived in the USA it was nowhere. I remember discussing how tricky it was to find there and how excited some friends were when they ate one in Australia. 
You can adjust this recipe to cut down on some of the naughtiness by using skim condensed milk, canola spread etc. I actually find the skim condensed milk makes it lighter and folds really well with the passionfruit.

You will need:
Melted butter, to grease

150g butter, at room temperature

1/3 cup caster sugar

1 tsp vanilla essence

1 egg

1 cup plain flour

1/4 cup self-raising flour

2 tbsp milk

395g can sweetened condensed milk

1/2 cup fresh lemon juice

1/4 cup passionfruit pulp (I use the WHOLE can, it makes it really passionfruity.)

Step 1

Preheat oven to 180C. Brush a 16 x 26cm (base measurement) slab pan with melted butter to grease. Line the base and two long sides with non-stick baking paper, allowing the sides to overhang.

Step 2

Using an electric beater, beat the butter, sugar and vanilla in a bowl until pale and creamy. Beat in the egg. Fold in the combined flours and milk until smooth.

Step 3

Spoon the mixture into the prepared pan. Use the back of a metal spoon to spread and press evenly over the base of the pan. Bake for 15 minutes or until a skewer inserted into the centre comes out clean.

Step 4

Meanwhile, use a balloon whisk to whisk the condensed milk, lemon juice and passionfruit in a large jug until smooth and well combined. Pour the condensed milk mixture over the base.

Step 5

Bake for 15 minutes or until firm to the touch. Set aside to cool completely. (I pop it into the fridge to cool.) Cut into slices to serve. EAT!
